There is a simpler way than taking every element of the game to fill the encyclopedia: after having upgraded the tablet sheikah sensor, to talk to Canel and complete his little quest. By going to him again once the mission finished, the latter will offer you to buy encyclopedia photos. For all of them, you will have to pay 6,000 rubies.
