It is indeed rarely possible to see the creature swimming off the island, well, we don't see it directly, but we see Polar Peak's castle that it still carries on its back.
Since it has the strength to take the castle with it, the creature is probably the reason why the iceberg was moving to where the Ice King wanted to go in the first place. It was probably it who brought the iceberg to the map, allowing the Ice King to freeze it completely during the Christmas event and free his zombies from the ice.
